Ancient corn.
New whisky.
Ancient corn.
New whisky.
Whisky has always been shaped by grain. Scotland celebrates barley. America transformed corn into bourbon. Mexico reveals a completely different side of the grain.
As the birthplace of corn, Mexico has cultivated and revered maize for more than 10,000 years. It is more than an ingredient. It is the foundation of Mexican culture, cuisine, and identity. Abasolo was created to honour that heritage, revealing a side of whisky the world had never tasted before.

Crafted at Destilería y Bodega Abasolo, the first distillery in Mexico built exclusively for whisky production, every bottle begins with 100% ancestral Cacahuazintle corn, cultivated by local farmers for more than 200 generations.

Rather than following conventional whisky making, Abasolo embraces nixtamalization, a 4,000-year-old Mesoamerican cooking technique traditionally used to prepare corn. Never before applied to whisky, the process unlocks remarkable depth and texture, revealing notes of roasted corn, honey, vanilla, black tea, and leather that simply cannot be created any other way.
Abasolo does not ask whisky drinkers to forget tradition. It asks them to discover another one.

Recognised around the world for both its craftsmanship and innovation, Abasolo is helping redefine what world whisky can be. Not by borrowing from Scotland or America, but by looking deeper into Mexico’s own history. Every bottle is a reminder that the future of whisky does not always come from new ideas. Sometimes, it comes from ancient ones.
