Created by St. Agrestis in Brooklyn, Phony Negroni set out to do something many considered impossible: capture the complexity, bitterness, and ritual of one of the world’s most iconic cocktails. Without alcohol and without compromise.

This is not a substitute. It is not a diluted alternative.

It is a meticulously crafted, ready-to-serve cocktail in its own right. Built on around thirty botanicals. From Tuscan juniper to southern Italian citrus and florals. Layered to deliver structure, bitterness, and a finish that lingers. A touch of carbonation adds lift and texture, recreating the familiar “bite” of a classic Negroni.


Developed at the St. Agrestis distillery using a proprietary process, the result is not dealcoholised, but purpose-built. A cocktail designed from the ground up to stand on its own.
